We like food.

Whenever our CrossFit Empower community gets together, you can bet there will be a table filled with great eats.

But we’re also very health-conscious and some, like me, are tracking their macros with care to support health and performance.

We all have weaknesses.  Cookies are one of mine.  Especially oatmeal cookies.   And the more I train, the more carbs I need.  But I’m very lazy and hate baking.

Which is why this healthy, easy oatmeal cookie recipe has become very popular in my home:

2 cups oats (I prefer gluten-free oats)
1 cup unsweetened apple sauce
2 table spoons vanilla extract
1 table spoon baking soda
1 very ripe, soft banana
cinnamon to taste
ginger powder to taste
pinch of salt
2 table spoons date powder (optional)
raisins to taste (optional)

Mix together thoroughly, you could use a blender but I just use a spoon and hand mix it.  Scoop out cookies onto a cookie tray lined with aluminum foil and greased to prevent sticking.  I use one big spoonful per cookie and let it flatten out on its own.  If you like, you could make it prettier if you so desired by using an ice cream scoop for each cookie and flattening it a bit.  Bake for 18-20 minutes at 325 degrees.  Let stand to cool 10 minutes before serving.  Yields about 16 soft, chewy oatmeal cookies.
